- 2 lbs yellow squash
- 3 tsp butter
- 1 cup Ritz crackers
- 1 cup grated cheddar cheese
- 2 chopped onions
- black pepper to taste
- ½ cup milk
- 1 egg
- ½ tsp salt
- Boil squash and onion until tender and mash.
- Add salt, pepper, butter, cracker crumbs, ½ of grated cheddar cheese, milk and egg; stir.
- Pour into a casserole dish. Top with remaining cheese and a few cracker crumbs.
- Bake at 350 degrees for 45 minutes.
