Ricky Tims had a great time encouraging his Facebook fans to help him come up with punny names for his entry in the August TQL Cookoff. (Recipes for this issue’s cookoff had to be inspired by stage plays!) The ideas his FB friends suggested are pretty funny, proving once again what a clever and creative lot quilters are. Ricky had a hard time deciding which one to choose—so much so that he promised to give us the recipe for his second choice too. Skillet Fried Southern Goodness (serves 4)
10 okra pods, sliced in 1/4″ pieces
1 egg, beaten
1 cup cornmeal
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/2 cup vegetable oil
In a small bowl, soak okra slices in the egg for 5-10 minutes. In a medium-size bowl, stir together cornmeal, salt, and pepper.
Heat oil in a large skillet over medium heat. Dredge the okra in the cornmeal mixture. Carefully place the okra in hot oil; stir continuously.
Reduce heat to medium when okra starts to brown, and cook until golden. I prefer overcooked okra, dark brown with some pieces “extra dark”.
